Party appetizers are always fun to make, and these Apricot Brie Bites are no exception. Always a crowd-pleaser, these little appetizers are quick, easy, delicious and so versatile that you can make them as you please.
I was a bit hesitant in sharing this Apricot Brie Bites recipe because they are soooo easy it’s almost like cheating. It is also yummy and perfect for a quick last-minute appetizer. So, if you are looking for the perfect, time-saver, and easy delicious treat to whip up quickly and serve in your next family dinner, get together party, I’ve made put up this recipe for you.
Apricot Brie Bites Recipe:
While there are some different variations of Apricot Brie Bites using Phyllo shells, Crescent roll dough, this 4-ingredient only recipe uses puff pastry, brie, prosciutto, and your preserve of choice (in this case Apricot preserve). If you are in a hurry, this is the recipe to go.
Puff Pastry:
Use 2 sheets of semi-thawed puff pastry as stated in the recipe below. Semi-thawed puff pastry is much easier to handle and less tacky. Cut each pastry sheet lengthwise into 3 even strips, then into 4 even strips crosswise. You should have 12 pieces per sheet, 24 in total if done correctly.
Prosciutto:
While you can definitely make Apricot brie bites or any baked brie bite recipe without Prosciutto, ham, or beef, don’t ignore this one. Prosciutto makes everything perfect. To experience the fullest flavor of this Italian ham, it’s best to serve it in paper-thin slices. So for the 4 slices of Prosciutto mentioned in this recipe, you’ll cut them into 6 sections for each slice, so you have 24 pieces in total.
Brie:
Brie can often disappear into the pastry while it bakes if cut in really small sizes. So they need to be a generous size. It’s totally okay to include the rind and save yourself the stress of peeling it before baking because it is EDIBLE, and you won’t be able to tell the difference once it’s baked.
Top it off with fillings as stated in the recipe below. And feel free to add or switch up any flavor that suits you.

Ingredients Needed
- 2 puff pastry sheets
- 8 oz brie wheel
- 4 slices of prosciutto
- 4 oz apricot preserves
- Fresh rosemary – optional
How To Make Apricot Brie Bites:
- Preheat the oven to 350 degrees F.
- Lay out the puff pastry sheets on a cutting board and cut each sheet into 24 2”x2” squares.
- Grease a mini muffin tin, and place one puff pastry square into each section. The edges may hang over.
- Lay the prosciutto slices on a cutting board, and slice into 3 sections (24 pieces total)
- Take a section of the sliced prosciutto and roll or fold like a fan. Then, place on top of the puff pastry, and continue for all 24 sections.
- Cut the brie into 24 sections. Place one piece on top of the prosciutto, and continue for all 24 sections.
- Top each with about ¼ teaspoon of apricot preserves.
- Bake for 12-15 minutes, or until golden.
- Remove from the oven, top with a tiny piece of fresh rosemary, and serve.

Can I Make Them Ahead?
Apricot brie bites are pretty easy to make so you don’t really need to do it the night before. But if you are going to have a busy day and really want can assemble them one day ahead, refrigerate them, then bake them right before serving.
You can also make them up to 3 days ahead by wrapping them in plastic wrap, store them in the refrigerator, and bake them just before serving. Serve warm or at room temperature.
Should I remove the rind from the brie before baking?
As mentioned before, the rind on the Brie wheel is edible but it can also be chewy. Most people like to keep the rind while some others just peel it off.
If you want the cheese to get super melty and fill the bottom of the puff pastry cups then you can trim off the rind before cutting into cubes.

- Lightly flour your work surface
- If you don’t have puff pastry, you can use the crescent roll dough, mini phyllo cups, Pillsbury croissant dough, or pizza dough.
- Be sure to grease your muffin pan really well.
- Try not to fill each cup to the top with the preserve so they don’t overflow while baking.
- You can use different types of preserves like apple, orange marmalade, blueberry, raspberry or strawberry instead of apricot.
