Did you know that eggplants have many health benefits? They contain lots of fiber, vitamins, minerals and are rich in antioxidants. I found a great article with awesome facts about eggplants! I am going to share some facts with you:

Heart health
The fiber, potassium, vitamin C, vitamin B6, and phytonutrient content in eggplants all support heart health…

Cancer
Polyphenols in eggplant have been shown to have anti-cancer effects…

Liver health
Research has suggested that the antioxidants in eggplant may help protect the liver from certain toxins…

Eggplants also contain flavonoids, such as anthocyanins. Anthocyanins are water-soluble pigments that have many health benefits. They also help give the eggplant its well-known, dark purple color.

The skin of the eggplant is rich in antioxidants, fiber, potassium, and magnesium.

The phenolic content of eggplant makes it such a potent free radical scavenger that this vegetable is ranked among the top 10 vegetables in terms of oxygen radical absorbance capacity.

Vegan Stuffed Eggplant With Lentils | Easy Recipe - Elavegan (4)Preparation Of Eggplants

I sometimes get asked what’s the best way to prepare eggplant. Eggplants might taste bitter (due to the glycoalkaloids) but the ones I ate actually never tasted bitter. I assume it’s different from region to region and it also depends on the variety.

If you are afraid of a bitter taste or can’t buy a low-bitter variety, you might want to try the following trick:

  • “Sweat” the eggplant by cutting it in half and then sprinkling each half with a little salt.
  • Set aside for 30 minutes.
  • You will see that moisture will be drawn out which you can rinse off with water (or pat dry with tissues).

As mentioned before, these eggplant boats are stuffed with a hearty lentil mixture and vegan cheese. However, I also used the eggplant flesh because if you prepare it with various seasonings it actually turns out to be tasty and flavorful!

I hate food wasting and therefore I would never throw away the scooped out eggplant flesh!

If you don’t like lentils, you can, of course, use beans (kidney beans, white beans, pinto beans, black beans…), refried beans, or chickpeas instead. I cooked the lentils (from dry brown lentils), however, you can also use canned lentils.

FAQs

What is the secret to cooking eggplant? ›

Eggplants are known to absorb a lot of fat while cooking. A useful tip to prevent sogginess and greasiness is to salt sliced or diced eggplant and let it sit for an hour. This helps to draw out moisture. Next, rinse and drain any liquid from the sliced eggplant, then pat dry before cooking.

Can you peel eggplant before roasting? ›

While the skin of a small young eggplant is edible, the skin becomes bitter on larger or older eggplants and should be peeled. When in doubt, the answer to, "Do you peel eggplant before cooking?" is yes, peel it.

Should you soak eggplant in milk or salt water? ›

Soak eggplant slices or cubes in milk for about 30 minutes before cooking. The milk not only tempers the bitterness, but it actually makes for eggplant that is extra creamy, since the vegetable acts like a sponge and soaks up a good amount of milk in its flesh.

How long does eggplant need to soak? ›

Submerge the pieces in the salted water. Use an upside-down plate or pot lid to weigh down the eggplant so it is fully submerged in the water. Let the eggplant sit in the brine for at least 30 minutes and up to 1 hour. Drain the eggplant and pat it dry with a clean kitchen towel or layers of paper towels.

Why is my baba ganoush so bitter? ›

Baba Ghanoush may taste bitter due to factors like the choice of eggplant, insufficient roasting, or the use of too much garlic, lemon juice, or low-quality tahini.

Why does my eggplant taste bitter? ›

Age and Size: Whether an eggplant is mildly or extremely bitter can depend on the age and size of the fruit. (Yes, eggplant is a fruit.) Larger, more mature eggplants can be more bitter, typically because their seeds are larger and seeds tend to hold on to the most bitter flavors.

What happens if you don't salt eggplant before cooking? ›

Salting: Salting removes excess liquid and some of the bitterness. Today's eggplants are bred for mildness, though, so it's not as important as it used to be (if you are frying eggplant, salting will ensure a creamy texture and rich flavor). This method works for eggplant slices, cubes, or planks.

What makes eggplant taste good? ›

The oil still left in the eggplant tissues contributes to the soft, buttery texture that's so appealing. Oil also carries the essence of added herbs and spices, so that eggplant dishes can become rich with the aromas and heady flavors of onions, peppers, anchovies, parsley, garlic, and lemon juice.

When should you not eat eggplant? ›

It's likely just been exposed to air and is experiencing enzymatic browning. An eggplant with brown spots is not safe to eat if it contains bugs or mold or exhibits other signs of spoilage. It should be thrown out.

Should eggplant be refrigerated? ›

Eggplants do not store well for long periods of time. Without refrigeration, eggplants can be stored in a cool, dry place for 1 or 2 days. If you don't intend to eat the eggplant within 2 days, it should be refrigerated.

Why is my eggplant skin tough after cooking? ›

If it's an extra-large eggplant, the vegetable could be older and the skin tougher, therefore, it's a smart idea to peel it. But small, young eggplant have thin, tender skins that add great texture to the vegetable when cooked.

Does eggplant need to be soaked before frying? ›

Typically eggplant behaves like a sponge, soaking up heroic amounts of oil when fried. The Terzo Piano chefs use this trick to prevent heavy aubergines: Before frying, soak the strips of eggplant in an ice water bath. They will absorb water and drop in temperature.

Is it really necessary to salt eggplant before cooking? ›

Older recipes call for salting eggplant to draw out the bitter juices, but today's eggplants are less bitter (unless very large), so salting is largely unnecessary. It will, however, help the spongy flesh absorb less oil and crisp up like a dream.

Do I rinse eggplant after salting? ›

Carefully rinse each piece of eggplant under cold water, making sure you remove all the salt.

Why do you soak eggplant in vinegar? ›

Why do you soak eggplant in water and vinegar? Soaking eggplant in water and vinegar helps remove some of the vegetable's natural bitterness. This step also helps preserve some of the skin's color so it stays a vibrant purple even after cooking.
